It all started because I had a lot of leftover oregano, and my family doesn't have (m)any recipes that call for it. I found this super easy recipe for psites patates (lemony roasted potatoes with oregano) on Food & Wine. I used 1 tablespoon lemon concentrate instead of 1 lemon since that's what we have. I've tried with both slightly less than 1 teaspoon salt and ~1.25 teaspoon. The latter is a bit crispier and more flavourful but I thought both were good! For the black pepper, I twisted the mill about 6 times. This is how I keep track, lol. The first time I made this, I confused myself when flipping the potatoes because I laid them out every which way on the sheet and sometimes had a hard time telling if I had flipped one already or not. the second time I was smarter and laid them out all pointed in the same direction. Live and learn. Anyways, it's so easy and so delicious! Best right out of the oven of course, but also amazing as leftovers in the microwave with some melted cheese!
